Paul Chapman, who runs the business with his brother Kevin, said the haddock bake was proving particularly popular with customers around the UK. He said: "It's a good product. It's very tasty and we are selling more and more to the farm shops and delis across the country.

"Last year we entered one of our fishcakes and we made the shortlist. Hopefully this year we can go one better and win it."

Chapman's, which has two varieties of its fishcakes stocked in Lincolnshire Co-op stores, is now looking to expand its product range further.

Mr Chapman said: "We have just started working with a new product development chef to look at some new products.

"We've had 13 products for the past couple of years, so we've decided it's time to add something new."
