TRADITIONALLY-smoked Grimsby haddock's listing as a top ingredient for 2013 has delighted a supplier of the town's proud delicacy.

Specialist fish merchant Jaines & Son was name-checked in The Independent's new year gastro-guide, which saw the surprise inclusion of the local delicacy make it on to the front page of Friday's edition. It ensured it grabbed some invaluable national interest, as well as highlighting food writer Sudi Pigott's insightful compilation, as reported by the Grimsby Telegraph on Saturday.

And while those involved in the artisan industry are working hard to maximise the benefits of the European Union's Protected Geographic Indication status that was hard fought for over a decade, it came as a pleasant surprise and a demonstration that the efforts are starting to pay off, with orders stacking up too.

Chris Sparkes is managing director of Jaines & Son, where a third party PGI smoker is used to produce the delicacy – on a par with Melton Mowbray Pork Pie and Champagne in Brussels' eyes – and then sold to retailers and the wider food service industry.

Mentioned because he supplies Booths – where chief executive Chris Dee imaginatively described to the author the unique wind condition provided by the Humber Estuary and North Sea in the smoking process as akin to an "angel's breath caressing you" – Mr Sparkes said: "Articles like this all add fuel to the fire, and any fuel we can provide to keep natural smoked fish prominent in people's minds will help.

"It has been quite successful for us, and is something that is a big part of the business now, and we are hoping it will continue to thrive.

"The smoked fish element is growing month by month, getting bigger and bigger, and we are looking at the natural progression of that. We really need to capitalise on this.

"We use an independent PGI smoker. We are big supporters of the PGI, we believe in promoting that Great Grimsby brand, and we want to push it as far as we can, flying the flag for Grimsby and all the things that still come out of this fantastic fishing port.

"It is a very dynamic place, and we are pleased to be part of it."

“Protected Graphic Indication status - as in, say, Danish blue cheese, Whitby Scampi, etc So that smoked fish produced in, say, Birmingham, could not be called Grimsby smoked fish - even if the fish was bought in Grimsby. Well done Chris - and all the fish merchants forever pushing Grimsby”
